I only use the crossfader for video mixing and liked the feature of disabling it in v7 so I didn't accidently have it to one deck or the other, I can't seem to find this option in VDJ 8 Pro. Was it removed or is it just called something different?

Go to config then under the "audio" tab look for "crossfader curve", now set that to disable.
