I have been operating Virtual Dj without any major issues on my MacBook Pro, recently it will not recognise the secondary monitor (projector) at all, the MacBook can clone its own desktop to the projector but will not send the video output from vdj. I have tried display settings and clone / extended options but nothing works.
My MacBook is fully up to date with its os. ( I have tried vdj 2018 as well as the vdj 7 I have left unchanged since install neither work)

You should have set your projector on extended mode (not clone).
If you grab the main skin and try to move it on your projector , does it show there ?
Goto VDJ Settings, OPTIONS tab, search for the setting videoWindowPosition, click on the X small button at the right side to clean its value and try to re-open VirtualDJ
