Todays silly question:
Is the waveform, while representative of the loud and quiet bits of the individual track, also representative of the overall volume? While some tracks are recorded louder than others, can I use this, as a visual to aid to my ear, to adjust the gain on either accordingly?

No. None of the available visuals can provide you info about the original level of the song, and the gain adjustment will not affect them.
Only textzones can provide you what you need.
You need to implement %level as textzone in your skin which shows the original level of the song
%Plevel which shows the level of the song after the gain adjustment, is already available in most of the skins.
You may ask that in the Wishes and new features forums though to be added in future release.
