Is there a switch somewhere within VDJ to boost the headphone volume on my MTP? Even at full chat, sometimes its a bit too quiet...

The output is the output. The max will be down to the circuitry in the MTP, which is probably designed more for the home user than someone who's going to be playing through a PA system.
You could try a pair of more efficient headphones, or an external headphone amp.
