I'm looking for a basic controller for mixing that only connects to the PC simply by digital usb. Do the majority of controllers offer this? In looking at pictures, they all look to have extra cables that are more complicated. My speakers & headphones connect by a USB sound device.

Almost all controllers these days offer a built-in sound interface.
The extra connectors you see are analog outputs for your amplifier or self-powered speakers and your headphones.
Also some of them offer analog inputs to connect extra devices like CD players and Turntables or Microphones

You can get a controller that just has a USB connection, and use the computer speakers. However, this will limit your creativity and keep you from progressing. This DJ thing is like crack, once you start, you will get better. Once you get better, you will want even more. I would buy a controller that has a sound interface in it, so you will not have to buy another controller right away, once you get better. This will let you have separate headphone and main outputs, and may even have a booth out. There are plenty on the market in various price ranges to suit all budgets. Most even come with a more advance version of VDJ, so you will be able to play without the 10 minute time limit that home user have with controllers.
