I love that we can plug and play some controllers but If i need to mod it there is no visible file to find the def or the mapping . Is there a way or something i'm missing ?

No. Definition files are built in the software and there's no way to extract them.
They contain confidential data and they can't be shared with the community. However, you can use the controllers SDK to rebuild the definition for any device you're interested at.

um that's like reinventing the wheel , when I already have the wheel! the second you use the keyboard to remap the native setting they don't work together..

All the mappers are there on "Controllers" tab on VirtualDj config.
The definitions are built in. If you want to create a new / different definition for a natively supported device then you have to either:
1) Name your own definition like "force-MyOwnDeviceDefinition.xml", or
2) Disable built-in definitions by changing the appropriate setting on VirtualDj Config->Options
Obviously we recommend the first way.
