I have an NS7II and the trigger pads are pressure sensitive meaning the harder I press, the louder/higher the sample gain is. Is there a way I can set the maximum gain?
Currently I have set the sample output to deck 3 so that I can use the channel fader to control the gain but I was wondering if there is a better option?

Again, that isn't gain you are controlling it's gate [how much of the gained signal you allow thru]
the upfader [a gate also, AKA gate faders for the old school] of a deck is one way there's also sampler master volume [again a gate]]
maximum gain [per sample] is set within the sample editor.

I was hoping there is another way to set the sampler volume because I think pressing the pressure sensitive pads seems to override the max gain on sample editor?

This might be a good use for the LoudMax plugin. Apply it to a deck that you're running the sampler output to / through.
