So, I was thinking.. if I connected my MC6000 MK2 USB-B to my Mackbook Pro USB-C would I still need to plug my macbook into the mains?

USB-C is also the charging port

yeah but when u add that converter to change to usb-c from regular you will lose those features i am sure.
also i doubt denon has designed their unit in a way to support charging of any device on the usb port since the technology is newer then the mc6000.
its a good idea i must admit though.
