If I currently have let's say a numark and it's all mapped out and customized. Then I buy a Rane, use that for a while. Will the Rane take on any customizations from the Numark? And when I switch back to the numark, will it still have my old customizations?

I would say NO.
Each saved mapping is unique, say, even your custom numark mapping is different from the default numark mapping, and that numark custom mapping (or any other) will NOT change unless one makes those changes to the mapping.
(ie changing the mapping for the Rane, will NOT effect/change the custom mapping you have for the Numark controller)

Note: Any changes made to VDJ by changing settings, custom buttons, padpages .. will indeed stay the same when you change hardware.
