if using just a laptop and external mixer (no controller) how can you use headphones and pick the channel to listen to?

You'll need to use a USB audio device as most laptops only have a single audio output.
That could be USB headphones (I presume these exist).
Theoretically, you could use Bluetooth headphones but it's a bad idea for DJing since Bluetooth significantly delays the audio compared to the main (speaker) output.
